Yes, you read that title correctly, paired with the “green stuff.” Y’all are probably wondering what I am talking about so here it is, kale gnocchi. Now I know we all are familiar with the Trader Joe’s cauliflower gnocchi, and though super delicious, have y’all tried the kale gnocchi?! I am telling you, it’s just as good! Super clean and oh so delicious.
I know you all love a quick and easy dish, so this one literally only takes 6 – 8 minutes to do and can all be found at Trader Joe’s or your local grocery store. The only tricky piece you may run into is finding healthy/yummy pre-made pulled chicken BBQ, but Trader Joe’s will have you covered on that one. I know, “pre-made” but it is all about reading the ingredients and I promise you, this one does not disappoint.
So you’re probably thinking, ok Tess, we see that it has chicken BBQ in it, but what else? Here’s the fun part…you can essentially pair your pulled chicken BBQ with the kale gnocchi and top it with pico de gallo (super yummy and fresh), or top it with your favorite vegan or dairy cheese. You could even dab a tbsp of sour cream on it too. Look at it as an open-faced loaded baked potato and top it with whatever you please, but for more health-conscious folks like myself, the chicken paired with the kale gnocchi and topped with fresh pico de gallo hits the spot.
Now I don’t follow the directions on the back of the kale, or even cauliflower, gnocchi because it takes some trial and error to get it right, but I first start with 1 tbsp of olive oil in a small saucepan, put in half of the kale gnocchi, continue to move the gnocchi around the pan, season it with pink salt and pepper, then add another tbsp of olive oil because you will notice that the gnocchi absorbs the olive oil and begins to stick to the pan, you don’t want that. So keep the gnocchi coated in the olive oil and cook for about 6 – 8 minutes.
You’ll want to heat the pulled chicken to your liking, put about a cup serving size in one side of the bowl, then the other half is filled with your gnocchi. Top with two tbsps of fresh pico de gallo and BOOM! Lunch, or even dinner, is served! Again, not the most flattering dish, but it’s full of protein, healthy carbs, and fresh veggies.
